Mr. Wilbur's Crawfish Jambalaya
1 # crawfish, peeled weight
1 large onion, minced
2 ribs celery, minced
1 small can tomato paste
1 small can tomato sauce
Cayenne pepper
Tabasco
Some parsley
3 or 4 pods of garlic
1 ½ t. garlic powder
6 cups water
2 cups
Raw rice
2 bay leaves
Salt & pepper
2 t. oil
Heat oil in large pot. Add onions, sauté till yellow. Add tomato paste, sauté 2 to 3 minutes, add sauce then water &
seasoning. Use lots of cayenne and Tabasco. Cook all about 30 minutes. Then add crawfish and rice. Cook slowly till rice is
done and is still juicy. The hotter it is the better it is. Believe me, Mr. Wilbur does use lots of Tabasco in this and all his dishes.
Keep a glass of water handy, if he seasons for you.
