Smothered Potatoes

8 med. Red potatoes, diced
1 large onion, sliced
4 tbsp. Oil
Salt & Pepper

Scrub potatoes well, can peel, but I don't. Heat oil in a heavy pot, preferably iron. Add potatoes 7 onions, salt & pepper. Cook on medium heat. Stir often to brown, not stick. After well browned you can cover & cook at lower heat. Cook till mushy. Eat with syrup & bread. This is very good served with pork chops.
