MOTHER'S CHICKEN STEW
1 medium size hen
1 small bunch of green onions
Flour
1 large onion
Salt, pepper, garlic powder
Make a roux with the flour, fry till good and brown. Add onions (both types), fry till onions are soft, add water and cut-up
chicken. Cook till chicken is tender. Add seasoning to taste and serve over rice, the Cajun way.
