GRAND-MA'S SMOTHERED RABBIT WITH WHITE BEANS AND RICE
3 to 4 pounds rabbit, cut up
2 tablespoons oil, if desired
salt & pepper
4 large onions, cut up
3 cloves garlic, diced fine
cooked rice and white beans
If rabbit is fat, cut off big hunks and omit oil. Put in iron pot and fry till brown. Add onions and garlic, continue to smother till
onions get pretty tender. Add about 1-1/2 cup water. Cover and cook till tender. Add salt and pepper and serve over rice
and beans.
