PA-PA'S CRAB STEW-N-RICE
1 dozen crabs, cleaned & fat removed and saved
3 tablespoons oil
4 tablespoons flour
2 ribs celery, chopped fine
3 cups hot water
1 medium onion
2 cloves garlic, chopped fine
Hot cooked rice
Use heavy pot, iron if possible, heat oil, add flour, if too dry, add 1 tablespoon more oil. Cook slowly till roux is starting to
brown good. Add onion and cook till good and brown. Add water, salt, pepper, garlic and crab fat from the shells. Cook
about 20 minutes. Add cleaned crabs & cook about 20 more minutes. Serve over hot rice. If you are a seafood lover, you
can not miss with this meal.
