AUNT PAM'S SHRIMP FILÉ GUMBO

1 ½ pound shrimp, cleaned
4 tablespoons oil
2 ribs celery
Garlic powder
Filé
4 tablespoons flour
1 medium onion
Parsley, chopped
4 raw eggs
1 tablespoon tomato paste

In a heavy pot (preferably iron), heat oil and add flour. If too dry, add a little more oil. This is a roux. Stir constantly, till it's almost brown. Add onion & tomato paste & cook till good and brown. Add water, 4 or 5 cups. Stir & add celery, parsley, garlic, salt & pepper. Cook about 10 to 15 minutes. Add shrimp. Cook about 30 minutes on slow boil. Drop eggs in one at a time & simmer till done, then add filé. Serve over rice with potato salad. That's the real Cajun way!
