POPPA ROY'S TURTLE SAUCE PIQUANTE

First catch & clean turtle
1 ½ pound turtle meat, cut into pieces
2 cans tomato paste
1 large onion
3 ribs celery, diced
3 green onions, chopped
4 pods garlic, diced
6 tablespoons oil
3 to 4 cups water
1 teaspoon Tabasco
Cayenne pepper
Salt & pepper
1 bell pepper, chopped
6 eggs, boiled, cut in ½
1 lemon, sliced

Add 2 tablespoons oil in pot, brown turtle, and remove to dish. Add 4 tablespoons oil & sauté onion till brown, add tomato paste. Add other vegetables, and sauté. Add water & seasonings, add turtle & cook till tender. Add boiled eggs. Serve over rice or spaghetti. Lip smacking good!
