Leli's Irish Stew (Cajun Style)

2 tablespoons oil
1 medium onion, chopped
4 potatoes cut in 1/4
Salt & pepper
1 pound stew meat, cubed
2 cans tomato sauce
4 carrots cut in 1/4
2 or 3 cups water

Heat oil, add meat & brown. Add onions & finish browning. Add sauce, salt, pepper & water. Simmer about 1 hour till done. Serve over rice.
