DADDY'S CHERRY CHEESE BARS
Crust: 1 cup of walnut pieces
1 1/4 cups of flour
1/2 cup of packed brown sugar
1/2 cup of Butter Crisco
1/2 cup of coconut
Filling: 2/3 cup of sugar
2 packages of Philly Cream Cheese
2 eggs
2 tsp. of vanilla
1 can of cherry pie filling
Chop half the nut fine and leave half-coarse. For crust, combine flour and brown sugar. Cut in the Butter
Crisco. Add 1/2 cup of finely chopped nuts and coconut. Remove 1/2 cup. Set aside. Press remaining in
bottom of 13x9x2 pan. Bake at 350 degrees for 12 to 15 minutes, until edges are light brown. For filling:
beat cream cheese, sugar, eggs and vanilla in a small bowl, until smooth. Spread over hot crust and return
to oven and bake 15 minutes longer. Spread the cherry pie filling over the cheese layer. Mix remaining nuts
and crust mixture together and sprinkle over cherry pie filling. Bake 15 minutes longer. Cool. Refrigerate
for several hours. Cut into bars. It takes some time to make but well worth the effort.
