CREOLE CALAS - FRIED RICE CAKES
2 cup cooked rice
1/3 cup sugar
½ tsp. Salt
3 tsp. Baking powder
3 beaten eggs
½ tsp. Nutmeg
1/3 cup flour
confectioners sugar
Combine the rice, eggs, nutmeg, and mix well. Sift dry ingredients and stir into rice mixture. Drop by teaspoon into hot fat and
fry to a golden brown. Drain and sprinkle with powdered sugar. A good way to use leftover rice, if you ever have any.
