MANHATTAN
3 parts Makers Mark Bourbon
1 part Berentzen's Apple Liqueur
A slice of Granny Smith Apple
Pour all ingredients over ice in a mixing glass and stir as you would a Martini. Strain into a chilled cocktail glass. Garnish with the apple slice.
*Traditional Recipe:
The Manhattan is the quintessential Rye Cocktail, except in Minnesota and Wisconsin, where they prefer Brandy Manhattans, and down South where Bourbon is the choice.
2 oz. Blended Whiskey
1 oz. Italian Sweet Vermouth
2 Dashes Angostura Bitters
Pour all ingredients over ice in a mixing glass and stir as you would a Martini. Strain into a chilled cocktail glass. Garnish with a cherry. Note: If you prefer a dry Manhattan, use dry Vermouth and garnish with a lemon peel.

THE DRIP
Absinthe is illegal around the world now. The drink is included because there was a time in the 19th century when Absinthe was the most widely used alcoholic beverage in the world. There is however, a product called Absente available on the market now which uses a type of wormwood called Southwood.
Put 2 oz. of Absinthe and 1 lump of ice in a good sized tumbler. Place an Absinthe spoon across the top of the glass with 1-2 lumps of sugar on it. (The Absinthe spoon is a flat spoon with little holes in it.) Now pour drop by drop, water on the sugar. The water dropping through the Absinthe spoon melts the sugar and sweetens the drink (and lowers the alcohol content. (Absinthe was bottled at 131 proof)

1 Red Dubonnet
Champagne
Place the Bitters soaked sugar cube in a white wine glass with a couple of ice cubes. Add Dubonnet and fill with Champagne or Sparkling wine. Garnish with a lemon peel. Note: The original recipe called for Secrestat Bitters, no longer produced today.

Pour both ingredients into an ice filled highball glass and top with soda water. Garnish with an orange peel.

Marinate 1 pear, 2 green & red apples, cored and cut into pieces, 2 cloves and 1 stick of cinnamon in one liter of vodka. Steep over night.
2 oz. Flavored Vodka
1 1/2 oz. Cranberry Juice
Chill serve up in a martini glass with a slice of apple.
