SALUD SINGIAN DAYRIT, during her time, was known as the best cook in San Fernando. Since the family fortune got depleted due to the ostentatious lifestyle of her parents, Lola Salud was not able to receive a Spanish education like her three elder siblings. Thus she started working at a young age. She was married to DEMETRIO PECSON SANTOS but was soon widowed. She had three children. MARIANO | FELICIDAD | MARCELINO It
is said that of the three Dayrit sisters, Salud was the most hardworking.
That is why she became prosperous.
She had many businesses, which of course included cooking and
baking. She also owned a
transportation business, having kalesas, karomatas, kutseros and horses
that did rounds everyday. It
was said that she woke-up at 4 in the morning to groom the horses herself.
This hardwork may have been attributed to the fact that she was
widowed very early. One thing which people remember about Salud was her birthday party on February 7, which she used to showcase all her wonderful recipes. All the "who's who" in San Fernando were invited. And her grandchildren would fondly describe her bed after the party, which had a huge pile of gifts on it. It is an unknown fact that the original recipe of the Pampango versions of the ensaymada, plantanilla, petit fors, empanaditas and tocino del cielo were concoctions of Salud. These recipes were passed on to her daughter Felicidad and later, to her daughter-in-law, Catalina Magat-Santos. Others tried to copy these recipes but the originals are still kept by the family and are still made to order in San Fernando today. Salud died of pneumonia on October 26, 1970 in San Fernando, Pampanga. Demetrio was the son of DON MARIANO JOVEN LEON Y SANTOS and DOŅA HIGINA DAVID PECSON. Don Mariano was gobernadorcillo of Bacolor in 1885, as well as mayor of San Fernando in 1902-03. His father JOSE LEON Y SANTOS was gobernadorcillo of Bacolor in 1857.
