      GRANDPA'S STEW
               Serves 6

GRANDPA'S STEW

  2 onions, coarsely chopped
  3 cloves garlic, crushed
  2 tbs. olive oil
  2 large cans crushed tomatoes
  3 tbs. sugar
     salt & pepper to taste
10 peppercorns (optional)
  2 bay leaves
  1 cup water
  1 stick butter
  4 lbs. meat  (Grandpa used beef ribs or lamb- ribs or chops)
  2 cans butter beans (or you can use lima beans)

Brown the meat in the butter in a large skillet.
In a Dutch oven or stock pot, saute' the onions and garlic in the olive oil.  Add the tomatoes, sugar, salt, pepper, peppercorns, bay leaves and water.  Bring to a boil.  Add the browned meat, reduce the heat and simmer slowly for about 2 hours.  When the meat is tender, add the butter beans and continue cooking for about 15 minutes longer.
