           SIRLOIN ROLL-UPS

MARY ANN'S SIRLOIN ROLL-UPS
   
        2 pounds sirloin strips                                                   1/4 teaspoon salt
    1/3 cup parsley, finely chopped                                       1/4 teaspoon black pepper
        5 cloves garlic, crushed                                                   2 tablespoons butter
        2 tablespoons red wine                                                       salt, pepper and oregano, to taste
    
Combine the parsley, garlic, wine, salt, pepper and butter.  Spread some of this mixture along each strip of meat.
Slice each sirloin strip lengthwise across the grain almost to the end and open up the strip so that you have a long piece of meat.
Beginning at one end, roll the meat up so it resembles a Danish pastry.
Put a skewer through each roll to hold it together.  Sprinkle with salt, pepper and oregano.
Grill 8 to 10 minutes per side over medium heat with the grill covered.  You can also broil the roll-ups in the oven.
