Mutton Cutlets

For 1 serving (2 cutlets): 100 g (3 1/2 oz) mutton, 1 egg, 1 onion, 1 clove garlic, lemon juice.

Put the mutton through a mincer, add salt, lemon juice, an egg and carefully stir up the minced meat. Shape into oval cutlets and bake in the oven for no more than 20 minutes. It is important not to overcook them there, since otherwise they will be too dry.

Served with a salad of sauerkraut, sliced, salted cucumbers and olives.
