Soft butter, for greasing

100g (1/2 cup, firmly packed) brown sugar

40g (2 tablespoons) butter, at room temperature, cubed

1 egg, at room temperature

2 tablespoons plain flour

2 tablespoons self-raising flour

1/2 teaspoon vanilla essence

3 teaspoons white sugar

Vanilla ice-cream, to serve

DIRECTION:

Step 1
Preheat oven to 180°C. Brush four 160ml (2/3-cup) ovenproof dishes with butter to grease.

Step 2
Use electric beaters on low speed to
beat the brown sugar, butter, egg, plain flour, self-raising flour and
vanilla essence in a small bowl until combined. Increase speed to medium
and beat for 2 minutes or until pale and smooth.

Step 3
Spoon mixture into greased dishes.
Smooth the surface of each with the back of the spoon and sprinkle with
white sugar. Bake in preheated oven for 18-20 minutes or until a skewer
inserted in centres of puddings comes out clean. Serve immediately,
topped with a scoop of ice-cream.
