Horizon - Opa! - Tzatziki

       Tzatziki is best
        when served chilled
        and goes well with meat
        or anything greasy.
        It is usually served in
        a small plate or bowl in
        small portions with
        fresh or grilled
        bread. It is a nice dip
        for raw vegetables or
        french fries, nachos or
        pitta bread.
        It is a strong appetizer!

       Note that Tzatziki
        should be creamy so
        use thick yogurt and
        drain well the
        cucumber. I try not
        to peel the latter
        too well because I
        find the few green
        pieces decorative.

      Good Tzatziki is a
        matter of taste.
        Some like it
        strong with lots of
        garlic. Others like
        me prefere it mild.
        Experiment!

      Always mix
        Tzatziki by hand as the
        mixer seems to make
        it watery!

Tzatziki 

Difficulty:   

Ingredients:

Thick yogurt
Garlic
Cucumber
Vinegar
Olive oil
Oregano
Salt - Pepper


                Peel and grind the cucumber. Drain it as much as you can. Put the yogurt in a bowl and add the cucumber. Crunch the garlic as much as you can and add some to the mix. Add some olive oil, some vinegar, oregano, salt and pepper and mix well. Taste a little and make corrections according to taste. Before you serve it you can decorate it with some parsley and olives.
