Stewed Lamb Brisket

Ingredients:
  • 1.333 lamb brisket
  • 0.75 lb spare ribs ( belly parts )
  • 2 star aniseed
  • 1 cardamom
  • 2 slices ginger
  • 2 stalks spring onion

    Seasoning:
  • 0.5 tbsp wine
  • 1 tsp sugar
  • 2 tbsp light soy
  • 1 tbsp dark soy
  • 4 cups water
  • Method:
    1. Wash, chop up and blanch lamb brisket in boiled water. Cook for 5 minutes.
    Remove and wash. Drain well. Wash and blanch spare ribs in boiled water.
    Cook for 5 minutes. Remove and wash with cold water.
    Section spring onion.
    2. Saute ginger, lamb brisket and spare ribs with 3 tbsp oil. Fry over high heat for
    5 minutes. Add star aniseed, cardamom and seasoning. Bring to boil.
    Then stew lamb brisket over medium heat still tender. Stir in 1 tsp cornflour
    and 2 tbsp water. Sprinkle with sectioned spring onion.
    Then bake for 5 minutes. Serve hot.
