Bird's Nest Soup
Ingredients:
3 oz bird's nest
8 oz chicken meat
4 egg whites
1 tbsp minced ham
2 slices ginger
2 talks spring onion
6 cups stock
Seasoning:
1 tsp salt
1 tsp wine
0.5 tbsp cornflour
dash of pepper
0.25 cup stock
Method:
1.
Put bird's nest into a big bowl. Add boiled hot water and soak till water cools down.
Drain. Mix 0.25 cup stock, ginger and spring onion with bird's nest. Simmer for 0.5 hour.
Remove and drain well.

Remove tendon of chicken meat. Mince and add seasoning. Stir well
till it turns into paste like.

Heat 0.5 tbsp oil. Sprinkle with wine. Add stock and bird's nest. Bring to boil.
Add minced chicken meat a little at a time. Stir well.
4.
Mix 1 tbsp cornflour and 2 tbsp water together, pour in the soup. Add egg white.
Sprinkle with minced ham. Serve hot.
