The Completely Unofficial Star Wars Encyclopedia - the largest collection of useless SW Information available online. Not comprehensive, but the fact that a single guy has been working on this for the past 8 or 9 years is pretty impressive.
The Force.Net - there is something for everyone on this site. Those of you who share my interest in 3d art would be well advised to take a look at their selection of meshes - some great hi-res models with amazing texture work. (They also host the above encyclopedia.)

Holonet News - Amazingly, an officially sanctioned site, it would seem... but it's actually pretty damn cool. Interesting format.
Wizards of the Coast Official Game Page - Wizards has the rights to the Star Wars Role-Playing Game. The system isn't half-bad - but one gets that Bill Gates/Monopoly feeling around WotC these days sometimes...
