The Great Martyrs Theodore the Oriental.

The Saint wearing a military gear pierces the dragon with the cross-lance. The arabic inscription means : The Great Martyrs Theodore the Oriental commandor-in-chief of the roman soldier.  -- (coptic calendar: 12 Tubeh)

The Lance that the Saint carriers has its upper extremity ending with a cross. Before restoration the cross is more visible than after restoration.
