BEVERAGES OF INDIA - PINAY  KE  LIYE
  A.)   MASALA  CHAI   -   (Spiced  Tea):
3 cups of water;    2 sticks of cinnamon;    15 cardamon pods;
15 whole cloves;    1 tbls. fresh ginger, minced;    3 tbls. black
tea leaves;    1 cup milk;    3 tbls. sugar:
   1.)   In a medium saucepan, bring water, cinnamon, cardamon, cloves, and  ginger to a
boil over medium-high heat. Turn off heat, add tea leaves, and cover pan. Let stand for 3
mins.
    2.)   Strain tea-and-spice mixture into another saucepan. Add milk and sugar and bring to
a boil over medium-high heat.
    3.)   As soon as tea begins to boil, remove from heat and pour into individual cups. Serve
immediately.           Serves  4 - 6.
  B.)   LASSI   -   (Salty  Yogurt  Drink):
1 cup plain yogurt;    2 1/2 cups ice-cold water;    1 tsp. salt;    1 tsp.
ground cumin;    1 green chili, minced:
   1.)   Combine all ingredients in a blender and blend about 15 seconds.  Pour in-
to glasses and serve immediately.                        Serves  4 - 6.
