| Traditional Orange Butter -------------------------------------- 1-1lb tub sweet whipped butter 1/2 jar orange marmalade Beat ingredients together and serve with pumpkin bread |
| Pork Chops and Pumpkin Butter ---------------------------------------------- 6 thick pork chops Pureed pulp from one medium size sugar pumpkin 1/2 cup packed dark brown sugar 3/4tsp cinnamon 1/4tsp nutmeg 1tsp freshly grated ginger 2tbs freshly squeezed lemon juice Salt and Pepper Cook pureed pumpkin over a medium-low heat, stirring often until very thick. (25 min) Add brown sugar, cinnamon, nutmeg, ginger and lemon juice, cook until sigar dissolves. (5 min) Put aside to cool Salt and pepper chops, then broil under high heat for 4-5 minutes per side. (If using thermometer, pull chops out at 140 degrees) Let chops sit for a few minutes to absorb the juices Reheat pumpkin butter in oven for 10 minutes, then spoon a generous amount to the side of each chop Ready to serve |
