Vegetable Khurma
Ingredients

Potato- 1 Big
Vegetables like carrot,beans,cauliflower,peas chopped into one inch long pieces
tomato-1 big
Onion-1 big
capsicum - 1
Chilli powder-1 teaspoon
turmeric-1 teaspoon
salt to taste

Grind to Paste
Ginger- 1 Tablespoon
garlic- 4 flakes
cardomom-1
cinnamon - 1 small piece
bay leaves-1
cloves-2
Coriander leaves- choppes- 1 tablespoon
puthina-chopped- 1 tablespoon
Grenn chillies- 5
cashew- 10

Coconut- grated- 1 cup(grind the coconut separately to a fine paste with 1/2 cup of water)(U can also coconut milk instead of this)

Procedure

Boil the potato and mash it.Boil the other vegetables also.Chop onion into fine long strips and tomato into fine pieces.

In a pan add oil.Fry the onions until golden brownThen add the tomatoes.Once it's cooked add the ground paste, chilli powder and turmeic.Cook until the oil separates.Then add all the vegetables.and then add the coconut paste and salt to taste..simmer for 10 -15 min

chop the capsicum into long pieces and fry in oil separately

garnish the Khurma with capsicum and coriander leaves

serve with Naan or 
Rava Idli
