| Name: Fred Rainert. Dob: 1966. Place of Birth:St. Michaels Nursing Home, Dunlaoghaire, Co. Dublin, Ireland. Education: Yes, and lots of it.....I have been kicked out of some of the best establishments in Eire LOL, ok ok joking aside, it was Rockford Manor for kindergarden, followed by Willow Park for Junior then onto Blackrock College for senior and then to Cathal Brugha Street Catering College in Dublin and then to Thanet Catering College in Kent, as well as a few other little places thrown in along the way Qualifications:City & Guilds 706/01 City & Guilds 706/02 Advanced Cookery Techniques Advanced Buffet Techniques RSH health and safety certification NVQ Level 2 Assessor COMP TIA A+ Technician (well nearly LOL) Revised 2002 HACCP basic handlers course Current Stats:Height 182 cm (or 6 ft), Eyes: 2 and blue :o), Hair: barely any and brown, Chest: 64", Neck: 19" Waist: Equator...ooops I meant 58", Shoe: 13UK 14 USA. Weight: eeek!!!! 430lb...yep one BIG person.........so be nice to me or else LOL. |
| I was born to an Austrian father and a German mother, in Dublin, Ireland, my father was a meat technician, but I still call it a butcher :o) and my mother was with the circus as a tightrope walker, and no one ever believes me when I tell them that one, hence her picture simply having to go in the gallery.... My domicile here in Dublin was rudely interrupted, when, due to my fathers employment as a plant manager for a meat factory, we moved to the UK, to Yorkshire in fact. Time went by and we moved around a bit more and settled for the longest period then in a rather nicer part of the country, Kent. Happy times here and fun. The next rude awakening was when I was shipped alone to Ireland to stay with another family whilst my parents remained in the UK, oh ok so most would say this was harsh at the age of 11 to be minus ones parents and with so called strangers, but the family are in fact lifetime friends to my parents with several children of their own. Fred being Fred, I had an absolute blast here, lived my life as happy as ever and milked both sides for attention LOL. Soon my parents arrived here in Dublin again and set up home in Foxrock, I continued my education at Blackrock College (well rather the avoidance thereof) when after a time things were going well enough to move to a much larger house then in Blackrock. My father at this point was self employed and selling machinery to meat plants for a company in Holland. He was the Irish representative but he also set up his own firms on the side and became very, how shall I put this, comfortable, yes comfortable (editors note - actually he was so good at it he became wealthy but one would never guess, for he was shrewed and was not pretentious). I then ended my time at Blackrock (well was asked to leave actually as they could never find me, I had become an adept at vanishing during term time and working to earn money for I had learnt it's value and wanted more). I smiled and waved goodbye to those castle walls (did I mention the Rock was a college in vast grounds and a castle?....well it was/is and damn posh too LOL), and made my cheerfull way to Cathal Brugha Street Catering College in my pursuit in becoming a Chef. Due to hospitalisation in my first year and several operations the powers that be, sadly said they would be unable to move me into the second year as I had missed far too many theory classes and would have to re-sit the entire first year. Well at 17 to 18 one doesn't think this is such a damn good idea and one tells the powers that be to get stuffed and races off to another country to do it the hard way :o) (oh if only I had known at the time lol) So now I land in Germany, luckily I speak the language due to my parents badgering me at home with it all the time, I understood every word - scary - :o) I started at The Hotel zur Insel Muhle, a 5 star, 24hr kitchen, and brand spanking new, a joy to work in, the head chef was a great teacher. So much time passed here far too quickly for I really enjoyed myself, until one fateful day the Chef died in an auto wreck, we were all saddened greatly at this. The replacement was a midget from hell,.......I was doomed from the start for he did not approve of laughter in a kitchen, and for those of you reading this that have met me in r/l, I have an unmistakable laugh and damn loud, rising from deep down, moreover I am always laughing, for everything seems to amuse me in one way or another. Well this all went sour when I introduced the head Chef to my two friends, Mr.Left and Mr.Right....... ..........oooops! :o) So I moved on to the centre of Munich and ended up in an exclusive establishment "Restaurant zum Burgehaus" and no, stop laughing, it wasn't a burger house :o) the name roughly translated means Mayors House. Well this all ended suddenly again when I had to go back to hospital for another lengthy stay, so I thought "stuff this" and went home upon release, home as in home to Dublin. After a short time recovering, I moved to the UK again where we had purchased a second house and I lived in Kent again and returned to studies as a mature student. I attended the very well known catering college in Thanet and was asked to stay for a third year and do the advanced level. Well needless to say I saw this as an opportunity for another year of fun before hitting the big bad world again. Whilst at college I worked in many, many, many places, to turn a few pennies for my own pocket and to pay for my habbit.......my cars. :o) Time came around and most of my colleagues moved to London or abroad to top rated establishments to further their careers as highly qualified Chefs. I did not, I had been to the silver service places, I had worked under leading name Chefs (don't forget I was 5 yrs older than most of them in my class) and had seen what city life was like....yuk!! I stayed and had the pick of the area for employment, and I picked and picked and picked. Time moves on as ever, so the time came that with my savings and help from my father I went to start my business, my very own business. So at 25 years of age, I became a restaurant owner, by 28 I was no longer a restaurant owner I was also bankrupt.....doh!!!! There were many reasons for this downfall, economic climate, bad weather in a tourist zone, a brother who was a partner who then absconded with a large chunk of the capital (namely �32,000...and brother dear brother you owe me still - and reader - no I don't talk to him). The same year of my bankruptcy, my father died, well a month or so later in fact. He died in his bed in his home in his sleep in Dublin. I arrived that day to be with my mother and took over the family at this point. After a time I settled my affairs in the UK and returned to Ireland to live in the family house/home with my mother so that I could care for her. I travelled back and forth for a while to settle matters, legal matters, house selling, etc. and have been here ever since, wow thats almost 7 yrs !!.....holy cow !! I landed a job here as a sales representative for the largest VHS Wholesale video company in Ireland and started my 3 yr track with them very happily. Sadly I got my first ever taste of redundancy here, although I must say that my employers, Nick Furlong and Norman Lyons were two of the nicest, warmest gentlemen I had ever met and were a joy to work for. I really felt the blow when that job ended. I had loved being one day in a suit the next in the office the next maybe on a long haul road trip with a van full of new release videos or maybe doing deliveries into the city to selected clients or merchandising new release videos into stores such as HMV or Virgin or Golden Discs etc. I loved that the job was not stagnant, it was not the same old four walls scenario day in day out. Well anyway, that was over, I wandered around a while and got deeper into another passion which had been developing.............ta daaaaa..........computers. I commenced a college course as a technician. Whilst doing this I still needed an income however, so I worked part time as a Chef, in the highest pub in Ireland, just on a Mountain around the corner from me LOL. And here I am to this day........ still smiling........ still happy......... But, things moved on as they always do, from being a part time Chef, I then became a full time Chef as I could not maintain my hight octane lifestyle (well ok ok I couldn't afford the food, the petrol and the smokes as well as my beloved trips to the States) as a student in the PC lifestyle. From a full time Chef in the main Kitchen, I moved onto the newly opened Bakery. This was the Head Chefs new baby, he requested that I run it for him and be "The Baker" - well shall we tell the truth here or shall we say that Fred wa sa super Baker and his bread was the best around? :o) Let's be honest as is my way, I sucked at it, I mean to say being a Chef and a Baker are polls apart although most do not realise this, with bakery you either have it or you don't....and I didn't.....in abundance :o) Well whilst being the Baker I also dabbled in the office computers upstairs and repaired where needed and helped and assisted the staff where I could. I enjoyed being around the PC's as I always have and felt it was time to make a move again, so, in January of 2002 I handed in my notice to my employer, and I did this with a heavy heart for I loved being in this establishment. Here came the surprise, they didn't accept the resignation !!! Instead we concoccted (whoa bad spelling!! damn but this geobuilder needs a spell checker!) a new position, that of "Business Development", nobody really knew what this would entail so we all agreed to sit back and watch it grow, or not, only time would tell. Well time has told, I am still there, I have my newly built office, my very, very posh executive chair bought just for me, my purpose built desk to my specifications, talk about being chuffed, yes I was/am. Now it was time to really work, this job, this position has me putting in more hours and effort than any other in my past, and I love every minute of it (but shhhh don't tell the boss) hahaha. Many ask what is it that I actually do, I suppose I can answer it with a long long list of tasks, projects, "jobs" but I prefer to simply reply with; "I do what needs to be done" and leave it at that. :o) |
