Current Modifications
I would classify current modifications to be at a minimum.  Unless of course you classify modifications as stripping the car of all the paint (original layer), gutting the interior except for the drivers seat, the dash, and steering wheel/column, and removing the engine and transmission, and most everything else in the engine compartment.  In which case, I'd say I'm off to a good start.  My current roommate actually did most of the stripping of the car for me. I am about three hours away working for the summer.
In about a week and a half, I'm headed over to Eugene and renting a welder, we're going to install the SCCA rollcage that I got from Evan (Thanks).  While I'm at it, I'll fill in the factory turn signal holes, fill in the holes for the rivets from the side molding, and hopefully weld up new seat mounts, if we can get the seats by then.  I would also like to fill in the two grooves in the roof, but I'm not sure if we'll get to that or not.  I will also likely fix the factory battery tray since it's about to rust off of the car.
This is a picture of the current dash.  The rollcage that I'll be putting in has a cross piece that goes right through the middle of the dash, so I'll be filling in all the seams on this dash with bondo, and making a fiberglass mold from it.  Then I'll have a light, thin dash that I can cut a bit out here and there to fit around the rollcage.
Sorry, the mice are on strike right now, come back later....  the engine is out for a full build-up.  I've got a 1300cvcc crank/rods to go into it, 74mm flattop 1975cvcc pistons for it, Total Seal Rings.  I'm planning on a heavily worked over eb3 head, a custom fabricated (me) tri-Y header.  Eventually I'll have Fuel injection (Motec, Haltech, etc) a low compression turbo, and a dry sump setup.  People always ask me why I don't put the money into a '67 Camaro or something, my reply is simple.  Lots of people have done that.  Nobody in my area has done this.
I recently decided that since the car will have a full internal rollcage, I think I'll cut out a lot of the internal sheet metal.  I'm already throwing out everything from the front seats back, and making a custom fiberglass dash.  I figure I'll try and cut weight wherever I can.  But, I don't want an all out racecar.  It'll have nice front door-panels, Prelude (hopefully) seats, and a full array of AutoMeter Phantom gauges.  The car will also have an alarm with remote entry.  I'm going for a racer/cruiser look... should be kind of nice... but loud.  I can deal with that.
