Information:
Okay, the Diamond Weapon isn't difficult like the others, he is also not an optional boss. You fight him after you take Bugenhagen to the Forgotten Capital.
Strategy:
Just cast Wall and Regen on your party, then blast Diamond with strong Magic attacks and Summons, because physical attacks don't effect him. Beware of his countdown, he will unleash a powerful attack when it reaches zero.
Information:
The first time you fight him, you are in Mideel checking up on Tifa and Cloud. This battle isn't difficult, as he flies away after a few rounds of being abused. Not an Optional Battle.
Strategy:
Just keep up your HP and beat him up with strong attacks such as Magic, Summons, and Limit Breaks.

First Battle
Information:
You can fight him when you get the submarine after you sink the leader sub, but I wouldn't advise it. Wait for your characters levels to be above 70 at least, and have all or most of your materia mastered.
Strategy:
You will need a masterd Phoenix materia paired with Final Attack, at least two of your characters with Mime, a mastered Knights of the Round (with HP Absorb, if you want), and a mastered Gravity materia paired with a
Information:
You can fight him on the third disc. You will find his head poking out of the sand in the desert near the Gold Saucer. To initiate the battle, fly the Highwind into it. You can run away from this battle.
Strategy:
Have 9999 HP and 999 MP. Have Cloud equipped with the Mystile Armor, mastered Knights of Round/HP Absorb combo, Final Attack/Phoenix combo, mastered Hades, Mime, Barrier with Wall ability, Restore with Cure 3 ability paired with a mastered All.
In Battle, cast Regen and Wall on your party, do not attack just yet, it won't hurt Ruby. He will blow away two of your characters, if he blows away Cloud, run away and heal your people if needed. Once you have just Cloud left, and Ruby has his arms in the ground, you can begin your attack. Cast Hades, because the status effects affect Ruby, unlike some other bosses. Cast KOR on the arms that pop up behind you, and Mime as many times as possible.  Ruby counters with Comet 2 and other magic attacks, but will usually miss thanks to the Mystile Armor. When the arms die, Ruby's immunity to attacks is gone, so you can pound away on him until he dies. If you should happen to die, Phoenix will ressurect you (up to 5 times, I think, when it's all mastered).
mastered Quadra Magic. Have your HP at 9999 and MP at 999. Take off any unnecessary materia, as Aire Tam Storm hurts 1000 HP for each Materia (Aire Tam = Materia spelled backwards). Try to spread out the materia, and have a character for healing. High level Limit Breaks will not help too much in this battle, Emerald has a resisitance to physical attacks. In battle, cast Wall and Regen on your charaters (W-Magic helps), then cast Demi, Demi 2, and Demi 3, they all hurt 9999 HP on Emerald each time, and you cast cast it on quad five times with Quadra Magic being mastered. You can Mime this. When Emerald opens the eye things on its arms, switch to Knights of Round, and Mime it as many times as you can in a row. The eyes should die after the the first KOR. Make sure you keep your characters HP safely high, and pummel away at Emerald with Gravity and KOR until he dies. If you should die, Phoenix will be summoned and ressurect you because of Final Attack. Emerald has more than 400,000 HP, so be prepared for a long battle.
