Oolong Tea

The process involved in the production of Oolong tea is in between that for Green Tea and Black Tea. The fermentation that takes place is faster than for Black Tea, and it occurs before and after the rolling and grinding process. The colour of the Tea produced is somewhat brownish.

 

Oolong tea production process:
   - Fresh tea leaves (Water content 75 - 80%)
   - Withering under the sun / outdoors (90 minutes)
   - Indoor withering and sorting process (4 - 7 hours).
   - Drying
I (enzyme oxidation prevention process with surface temperature of 300° - 350° C)
   - Rolling (5 - 12 minutes)
   - Cutting
   - Drying
