ATKINS SWEDISH MEATBALLS

1/4 C      Heavy cream
1/4 C      Water
1/4 C      Sugar free pork rinds
1/4 lb     Ground beef
1/4 lb     Ground pork
1/4 lb     Ground veal
1 large   Onion, chopped fine
2 tsp       Season salt
1 recipe of Cream Sauce
1.2 tsp    Nutmeg
1 tsp      Caraway seeds

Combine cream, water together in small bowl.  Add crushed pork rinds to soak, soften; about 10 minutes.  Add meat and mix.  Mix cream mixture, meat, onions, seasonings; form into balls.    Brown in butter in medium skillet until brown.

Make Cream Sauce and pour over meat balls; garnish with nutmeg & caraway seeds.
