| ATKINS CREAM SAUCE (Low carb sauce) 1/4 lb Butter 3 Egg yolks 1/4 C Water 1/4 C Heavy cream Dash of nutmeg Place butter in top of double broiler or in saucepan that is placed inside of a large dutchoven with a couple inches of water almost boilin. Place egg yolks in pan one at a time; beat with electric or rotary mixer. Add water, cream; continue to beat until sauce thickens. About 7-10 minutes. Add nutmeg for garnish. |
