Dream sandwich

Ingredients

Eggs-6
Castor sugar- 230 g
Flour- 175 g
Sugar- 4 tbsp
Cocoa- 4 tsp
Raisins cut into half- a handful
Cashew nuts, chopped- 6 tbsp
Drinking chocolate- 2 tbsp
Vanilla ice-cream- 1 party pack
Cherries and cashew nuts for decoration

Method

1. Grease, line and re-grease a tin. Beat eggs and castor sugar until thick and double in quantity. Sieve flour and cocoa together, and fold it in lightly. Pour this mixture into the prepared tin. Bake in a hot oven for about 12 min or until the cake is springy to touch.
2. Dissolve sugar in one cup water and soak the raisins in this syrup. Cool the cake. Slice the cake horizontally into 2 /3 layers. Pour the sugar syrup over the cake layers.
3. Spread the ice cream , raisins and 2 tbsp of cashew nuts over each layer of the cake.
4. Spread ice cream on the top layer of the cake.
5. Decorate the cake with drinking chocolate powder, cashewnuts and sliced cherries. Chill the cake thoroughly.
