scallion pancakes
   mandarin: cong you bing

(makes 12 small pancakes)

dough:
  
1. 2.5 c. flour
  
2. 3/4 c. boiling water
  
3. 1 egg or 1/4 c. cold water

filling:
  
4. shortening/butter/margerine/oil
  
5. chopped scallions/green onions/chives
  
6. salt

sauce:
  
7. soy-vinegar dipping sauce

add
2 to 1 and mix.  add 3 and mix.  wait 20 mins.  knead dough on lightly oiled surface until smooth.  roll dough into a cylinder and divide into 12 pieces.  roll each piece into a flat circle.  spread 4 on each circle and sprinkle 5 and 6 on top.  fold two opposite ends of the circle to overlap slightly, roll perpendicular to folds, turn on side and flatten into a very thin circle.  fry in oil and serve with 7 for dipping.
