Low Fat Recipes Miso based Soba noodles (buckwheat noodles) Good for those going on a protein diet. Just a handful of dried soba sticks boiled until soft. Run tru tap water or cold water. For the stock, you will need white miso(japanese soybean paste) - 2 to 3 tsp along with your desired amount of soya sauce with about 2.5 cups of water and bring to boil before adding in soba. You may also add in some vegetables such as "buk choy", seaweed and beancurd. For non vegetarian, you can also add in some meat. Soba can be cooked and kept in the fridge until needed. This dish is easy and fast to cook and contains very low amount of fat, if any. Hot & Sour (soup based) steamed fish Marinade fish with salt, steam and set aside. Meanwhile bring 500 ml of fish stock to boil. Add in sliced ginger flower (1 stick, flower only), 2-3 slices of galangal, 4-5 torn kaffir lime leaves, 4 tbsp lime juice. Add in sliced 2-3 nos chinese mushroom (soaked), and a handful of shredded salted mustard (Ham Choy- soaked), and 5-6 nos of whole birdseye chilli. Finally, add in 2 nos tomatoes (cut into wedges) and season with fish sauce. Place fish in a deep platter and pour hot stock over. Garnish with some Chinese parsley (yim sai). Eat while its hot. Thai Tom Yum Soup Uses minimal amount of oil derived from Thai Sweet Chilli Paste. Here's the recipe. Bring to boil 750 ml chicken stock. Throw in 1 stick of sliced lemon grass, 1 stick of sliced ginger flower, 1-2 slice of galangal, 4 kaffir lime leaves and about 3 tbsp of lime juice. Add in 2-3 tbsp of grinded Thai sweet chilli paste. Season with Thai Fish Sauce (about 3-4 tbsp). You may add in other ingredients such as abalone mushrooms, green vegetables, and prawns (shells removed). Garnish with some Chinese parsley and add in chopped bird's eye cili for that added spiciness. Yummy ! A fast, simple and inexpensive soup.
