Pomona Sprout
Sprout teaches Herbology. She's a shorter woman and is slightly chubby. She raised mandrakes, along with the students, in Harry's second year that ultimately de-petrifyed the students that had had a run-in with the Basilsk. Other than that she hasn't done much at all.
