Ingredients:
DOUGH INGREDIENTS
3 / 4 cup + 2 tablespoons water
1 tablespoon olive or vegetable oil
3 / 4 teaspoon salt
2 1 / 4 cups all-purpose flour
1 / 4 cup cornmeal
2 teaspoons FLEISCHMANN�S Bread Machine Yeast
olive oil for brushing



Instructions::

Add water, 1 tablespoon oil, salt, flour, cornmeal, and yeast to bread machine pan in the order suggested by manufacturer. Select dough/manual cycle.

When cycle is complete, remove dough to lightly floured surface. If necessary, knead in enough flour to make dough easy to handle. Divide dough into 4 equal pieces. Roll each to 8-inch circle. Place about 1 cup Three-Pepper Cheese Filling on one half of each circle; moisten edges. Fold dough over filling; press with tines of fork to seal. Place on greased baking sheet. With the fork, prick on several spots on  top of each calzone for the escaping steam while baking. Brush tops with olive oil. If desired, sprinkle with toasted sesame seeds..

Bake at 400oF for 25 minutes or until done. Serve warm

Tips:

When timing the preparation, set aside 1 hour 30 minutes for the dough then about 30 minutes til it is baked.

You may use a sharp knife to create slits on top of the calzone.

This is a good way to use up leftover roasted chicken or pork or beef, and getting the kids eat veggies.
Chicken-Pepper-Cheese Calzone
FILLING INGREDIENTS:
mix cooked meat, cut into smaller pieces with chopped veggies (suggested: raisins, carrots, potatoes cut in small cubes, bell peppers chopped) and shredded cheddar cheese to make about 4 cups. May add salt and pepper to taste.
prepare dough (set 1 hr 30 minutes for this)
punch dough on slightly floured surface
cut into 4, shape into balls then flatten with hands or rolling pin
place 1 cup of the filling on half of the flattened dough, moisten edges
fold dough over filling
using tines of fork, press over the edge of dough to seal, then prick the surface with fork for venting steam while baking
place on greased baking sheet, Brush tops with olive oil
sprinkle with sesame seeds
bake for 400 deg F for 25 minutes or until lightly brown
shows calzone that has been partially eaten. Parang empanada!
