Roast Beef and Gravy

Ingredients

  • Roast (Beef tri-tip, roast; Pork shoulder, butt)

  • Garlic

  • Bay leaves (for pork only)

  • Pepper

  • Garlic salt

Recipe

  1. (optional) Cut roast in half so it cooks faster and more evenly

  2. Cut slits or holes into meat with fat side up (so juices stay in meat/ fat side will be up)

  3. Insert garlic cloves and/or bay leaves

  4. Sprinkle all sides with garlic powder, salt & pepper

  5. Roast for approx. 1 1/4 hour at 375 F

  6. May need to cover top with foil if it starts to burn

  7. Serve by cutting against the grain

Gravy

Ingredients

  • 2 cups water

  • 1/2 cup flour (per 2 cups water)

  • Dark soy sauce (approx. 1 tsp)

  • Pepper

  • Meat drippings

  • Bouillon cubes (1 per cup of water)

Recipe

  1. Add water to a pot and heat, eventually to a boil

  2. Add bouillon cubes

  3. Add flour and stir

  4. Add dark soy sauce for color (a splash will do)

  5. Add pepper to flavor

  6. Drain drippings from meat, skim and add to gravy
