Lobster Spring Rolls

Ingredients:

  • 10-20 Rice paper sheets

  • 1 cucumber, peeled

  • 1 carrot, peeled
     

  • 1 mango, peeled

  • 1 strawberry papaya, peeled (can do w/o, but would use if papaya is in season)

  • 2 lobster tails, with meat chilled
    (8 medium shrimp can substitute for lobster)
     
  • 1 tbsp. Mayonaise
  • Juice from 1 lime
  • 1 tbsp black sesame seeds (optional)
  •  Green lettuce leaves
     
  • 1 bunch of cilantro
  • 8 mint leaves (adds a nice flavor)
  • 4 green onions
  • Thai (sweet) chili sauce

 

Recipe:

1.      Soak rice paper in water until soft

2.      Cut cucumber, carrot, mango and papaya into julienne.  Put mango and papaya in a separate bowl, and cucumber and carrot in another.

3.      Chop lobster into bite size pieces, put in a bowl, add mayonnaise, lime juice and black sesame seeds.

4.      Assemble as described below:

5.      Lay 1 rice paper sheet flat

6.      Place lettuce leaf pieces on top

7.      Add julienned fruit

8.      Add julienned vegetables

9.      Add chopped green onions

10.  Add lobster/shrimp mixture

11.  Add cilantro sprig

12.  Add mint leaf

13.  Add small amount of sweet chili sauce

14.  Fold like a burrito

 

Optional Spicy Peanut Sauce:

In a sauce pan, combine 1 can of coconut milk, 2 tbsp. Peanut butter and 2 tbsp. Thai chili sauce.  Cook, stirring until thick, then cool.
