Beef, Onion & Peas Curry Rice

Ingredients:

  • 1 lb ground beef

  • A day ahead, cook 2 cups of rice and refrigerate

  • 1 yellow or red onion, chopped

  • 1 cup peas

  • Curry powder

  • Siracha Chili sauce

  • Light soy sauce

Recipe: 

  1. Thaw peas in wok and evaporate off water; remove to a bowl

  2. Cook ground beef and onions in a wok; drain fat

  3. Add 1-2 tbsp soy sauce and stir

  4. Add 1-2 tbsp curry powder and stir

  5. Add cold rice to beef & onions, crumbling to break up the chunks

  6. Add peas

  7. Add curry powder and soy sauce to taste

  8. Add 10-30 drops of chili sauce to spice up the dish

Serves 4-6
