| More than 200 years
ago sailors on long voyages had a very poor chance for survival
because they might die of the dreaded scurvy. It was then discovered
that by supplementing lime juice scurvy could be prevented. Researchers
later discovered that scurvy was not a 'disease' but rather it
was caused by neglect or omission of a vital antioxidant in the
body, namely, ascorbic acid (vitamin C). Researchers have since discovered other diseases of neglect related to other vitamins. For example: vitamin B1 and Beriberi, Niacin and Pellagra, vitamin A and Xerophlalmia (partial then total blindness), Vitamin D and Rickets, Folic acid and the birth defect Spina Bifida, and various types of anemia. These are 'diseases' related to vitamin deficiencies. Also, Kwashiorkor is a common 'disease' caused by insufficient protein. It is well known that children and adults who do not eat enough protein have impaired learning and mental abilities. Removing protein from the diet is one method used to "brainwash" people. Dietary deficiencies are as serious as bacteria and viruses in causing ill health. Proteins consist of amino acids which provide the necessary building blocks to keep the body functioning. Researchers have recently discovered that certain amino acids are temperature sensitive (thermolabile), that is, heat causes them to break down. Many vitamins and minerals in our foods are greatly reduced due to being highly refined and processed. Our ability to absorb vitamins also decreases with age (especially vitamin B12). Confronted with this problem we must seriously consider supplements to help restore balance to our system. The amino acid cysteine (pronounced sis-teh-een), can be synthesized by the body but the result can be elevated cholesterol and homocysteine levels (now identified as a high risk factor in atherosclerosis (hardening of the arteries). |
