On to Buffalo Chicken Bites


Cookie Magic
Cookie Magic is a basic recipe for several variations of cookies

7 � c all-purpose flour
2 � c granulated sugar
2 c powdered sugar
4 tsp baking powder
1 tsp salt

In 4-qt bowl, mix 3 � c of the flour and all remaining ingredients.  Stir in remaining 4 cups flour.  Store in tightly covered container up to 3 months.   Use mix to make the following recipe of Glazed Peanut Butter Cups.   In the next 3 months I will add the recipes for the other variations.

Glazed Peanut Butter Cups
2 c Cookie Magic mix
� c creamy peanut butter
1/3 c butter, softened
1 egg
1 to 2 T milk, if needed
48 miniature milk chocolate-covered peanut butter cups, unwrapped

Glaze
� c semisweet chocolate chips
2 tsp shortening
Heat oven to 350 degrees.  Grease 48 mini muffin cups with shortening or spray with cooking spray.   Stir cookie mix before measuring.   UIn large bowl with electric mixer, beat mix, peanut butter, butter and egg on medium speed, scraping bowl occasionally, until dough forms; if needed, add 1 to 2 T milk.

Shape dough into 1" balls; place in muffin cups.  Press 1 peanut butter cup into each ball.  Bake 13-18 minutes or until dough is set and golden brown around edges of candy.  Cook 5 minutes; remove from pan.  Cool completely, about 30 minutes.
