Bread



Pumpkin Bread

1st set of ingredients:
4 eggs
1 c. cooking oil
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. nutmeg
3 ½ c. sugar

2nd set of ingredients:
3 ½ c. plain flour
½ tsp. baking powder
1 tsp. salt

3rd set of ingredients:
2 c. pumpkin
1 c. nuts (optional)
1 c. raisins (optional)

Mix the first set of ingredients. Then add the second set of ingredients. Last, add the third set of ingredients.

Bake at 350 for approximately 55 minutes.

Mix brown sugar and water; coat the pumpkin bread as soon as it comes out of the oven.



Fluffy Down Home Pancakes

1 c. flour
1 lg. egg
¾ c. plus 2 tbsp. milk
2 tbsp. salad oil
½ tsp. salt
2 tbsp. sugar
2 tbsp. baking powder

Combine egg, milk and oil. Add sifted dry ingredients and beat until smooth. Make in a Pam sprayed skillet until golden brown on both sides.



Old-Fashioned Blueberry Muffins

2 c. all-purpose flour
2/3 c. sugar
1 tbsp. baking powder
½ tsp. salt
½ tsp. nutmeg
2 eggs, beaten
½ c. milk
½ c. butter or margarine, melted
1 ½ c. fresh blueberries
¼ c. sliced almonds
1 tbsp. sugar

Combine first 5 ingredients in a large bowl, reserving 1 tablespoon to toss with blueberries. Make well in the center of the mixture. Combine eggs, milk and butter add to dry ingredients, stirring just until moistened. Toss blueberries with reserved flour mixture to coat; stir into batter. Spoon mixture into greased muffin pans, filling 2/3 full. Sprinkle with almonds and 1 tablespoon sugar. Bake at 400 for 15 to 18 minutes. Yield: 18.



Monkey Bread

2 pkgs. yeast
1 c. warm water
1 c. shortening
1 c. hot water
1 ½ tsp. salt
¼ c. sugar
6 c. flour
2 eggs
1 stick melted butter

Dissolve yeast in 1 cup warm water and set aside. Melt shortening in the cup of hot water. Add sugar and salt; let cool. Add to yeast mixture. Add eggs and flour. Let rise until double in size. Knead and roll to about ¼ inch thick. Cut in all shapes and dip in melted butter. Place in 2 tube pans. Let rise again until double in size. Bake at 350 for 30 to 40 minutes or until brown.



Easy Dumplings

½ stick oleo
2 c. flour
½ tsp. salt
1 c. boiling water
1 egg yolk

Mix all ingredients together, adding water last. Let stand until cool. Roll out thin and cut into squares. Drop in boiling broth.
