| Jamie's Monkey Bread (Sticky Buns) Melt � cup butter in baking (bundt is best) pan Add � cup brown sugar & pecans � cup butter melted on side 1 cup sugar and 1 tablespoon cinnamon Dip biscuits in butter then roll in sugar mixture Layer in pan Bake at 325 until risen |
| Apple Cider Cheesecake 10 oz. Canned apple pie filling 9� crumb crust 8 oz. Cream cheese 4 oz. pkg. Instant spiced cider beverage mix 5 oz. Light whipped topping (thawed) 1 crunchy granola bar Spread pie filling on bottom of crust. Beat cream cheese til soft, then add sour cream and cider mix and beat til fluffy. Fold in whip cream. Pour over pie filling and refrig. Crush granola bar in a sandwich bag and sprinkle over top just before serving. |

| Hot Cocoa Mix (great gift!) 1 c Cremora Non dairy creamer 1 c Nonfat dry milk 3/4 c Sugar (or more, to 1 cup) 1/2 c Unsweetened cocoa FOR MOCHA, ADD 1/4 c Instant coffee FOR MEXICAN, ADD 1 ts Ground cinnamon FOR LOW CALORIE, ADD 15 Envelopes nutrasweet -or add 2 ts (5 env.) granulated sugar - substitute Omit sugar Mix ingredients. To serve, spoon 2 heaping tablespoons into mug. Add 3/4 cup boiling water. Stir. |
| David�s Favorite Chocolate Chip Cookies PREHEAT OVEN 375 � cup shortening (butter flavor is best) � cup butter or margarine � cup granulated sugar 1 cup packed brown sugar � tsp. baking soda 2 eggs 1 tsp. vanilla 2 � cups all-purpose flour 1 12oz. pkg. (2 cups) semisweet choc. Chips 1 � cups chopped walnuts, pecans, or hazelnuts (optional) 1. In a large mixing bowl beat the shortening and butter or margarine with an electric mixer on medium to high speed for 30 seconds. Add the granulated sugars, and baking soda. Beat mixture till combined, scraping sides of bowl occasionally. Beat in the eggs and vanilla till combined. Beat in as much of the flour as you can with the mixer. Stir in remaining flour. Stir in choc. chips and, if desired nuts. 2. Drop dough by rounded double-tablespoons 2 in. apart on ungreased cookie sheet. Bake at 375 10 minutes or until edges are lightly browned. 3. For giant cookies, use a � cup measure or scoop to drop mounds of dough about 4 inches apart. Bake for 11 to 13 minutes or until edges are lightly browned. |
| Jessica�s Chicken Stew 1.5-2 lbs. Chicken 4 � -5 quarts Water 4 tbsp. salt (to taste) 1 tsp. Sage & � tsp. thyme OR 1tsp. sage & � tsp. poultry seasoning 4 medium potatoes, peeled and chopped 1 cup Minute Rice or 1 bag of Boil-in-bag Veggies (see below) Bring chicken (I prefer white meat) to a rolling boil with seasonings (play with those based on what you have or don�t have). When chicken is cooked or nearly cooked, take out from broth and remove any skin, bones or fat AT THIS TIME (leaving it on during the initial boil adds flavor). Pull chicken apart and cut into pieces. While you are doing that, dump in potatoes and allow to continue boiling, at a little lower heat. Return chicken and add rice. When ready to serve, to thicken broth to desired consistency, mix 2 tbsp. flour or cornstarch with about a coffee mug full of water and make sure all flour is mixed in (NO LUMPS). It will look like skim milk. Stir into simmmering stew. Repeat until thickened. Serve with Jamie�s Awesome Cornbread. Optional Veggies Onion, diced (add with potatoes) 1 � cups halved baby carrots (boil or simmer at least 15 minutes) � bag corn (frozen) (after rice when almost ready) � bag green beans (frozen) (after rice when almost ready) |
