Diet Soda Cake
Serves 10 : 4 points per slice

1 box cake mix any flavor
1 can diet soda any flavor

Bake cake according to package directions.  This cake is AWSOME! It's been my salvation for something sweet durning my years on Weight Watchers! Some put fat free cool whip or you can put a can of cherry pie filling or whatever you can come up with.  I still haven't found the perfect frosting recipe. Just remember to add extra points.

Better Than Sex Cake
1 Box Devils Food cake mix
10 oz. Diet cola
1 egg white
6 oz. Fat Free Caramel ice cream topping
7 oz. Reduced fat or fat free sweetened condensed milk
1 cup heath bar bits (you can either take a heath candy bar and break into pieces or buy them already crumbled in the chocolate chip isle at the grocery store)
1 container fat free cool whip thawed

Mix cake mix, egg white and diet cola.  Bake as directed, in a 9X13 pan.  During the last gew minutes of baking, put caramel and sweetened condensed milk in a sauce pan and stir on medium heat until mixed.  Take cake out of oven and poke holes all over the top with a tooth pick.  Pour caramel mixture over cake, filling in holes.  Sprinkle heath bits over the top, reserving some for top.  Cool completely.  Cover with container of cool whip and sprinkle with remaining heath bits.  Keep chilled in refrigerator until ready to serve. This cake is even better the next day, so keep it refrigerated.

Honey Bun Cake

Serves 15 = 4 points per serving

1 yellow or white cake mix
3 egg whites
1 cup (8 oz.) reduced fat sour cream
2/3 cup unsweetened applesauce
1/2 cup packed brown sugar
2 teaspoons ground cinnamon
1/2 cup powdered sugar
1/2 teaspoon fat free milk
1 teaspoon vanilla extract

In mixing bowl, combine dry cake mix, egg whites, sour cream & applesauce.  Beat on low until moistened.  Beat on medium for 2 minutes.  Pour half of the cake mix into a 9X13 baking pan coated with nonstick cooking spray.  Combine brown sugar & cinnamon & sprinkle over batter, cut through with a knife and swirl.  Bake at 325 degrees for 30-40 minutes or until toothpick comes out clean.  For glaze, combine powdered sugar, vanilla and milk.  Drizzle over warm cake.

Peanut Butter Cups

Serves 12 = 2 points per serving

1/2 cup plus 1 teaspoon peanut butter
1 cup skim milk
1 small box  instant sugar free fat free chocolate pudding
1 cup fat free cool whip

Mix first 3 ingredients together.  Fold in cool whip.  Pour 2 tablespoons of mixture into lined muffin tin.  Freeze for 2 hours.

Power Sticks

Total recipe= 24 points
12 sticks = 2 points
8 sticks = 3 points
6 sticks = 4 points
Just choose the size you want.

1/2 cup chunky peanut butter
3 Tablespoons honey
2/3 cup cornflakes, crushed
1/3 cup instant dry milk (fat free)

Knead ingredients together.  Form into all number of sticks you want.  Wrap individually in waxed paper.  Store in airtight container.

Orange Dreamsicle Cake

24 Servings = 2.5 points per serving

1 Box orange cake mix or 1 white cake mix (if using white cake mix add 1/2 teaspoon orange extract)
10 oz. diet orange soda or diet 7-up
1 egg white
2-4 oz. boxes fat free sugar free orange jello
1 box 4 oz. sugar free instant vanilla pudding
1 cup hot water
1 cup cold water
1 fat free milk
1 teaspoon vanilla extract
1 cup fat free cool whip thawed
8.25 oz. can manderian oranges, drained and patted dry with paper towel.

Mix cake mix, egg white and diet soda.  If using white cake mix, mix orange extract now. Bake at 375 degrees for 35 minutes or until toothpick comes out smooth, in a greased 9X13 pan.  Take cake out of oven, and poke holes all over the top.  Let cool.  Stir 1 package of orange jello into 1 cup hot water until dissolved and then add 1 cup cold water.  Pour entire mixture over cake, refrigerate for at least 3-4 hours.  Mix vanilla pudding mix and other pack of dry jello toghether.  Add 1 cup fat free milk and 1 teaspoon vanilla extract, mix well.  Fold in cool whip and use this mixture to frost cake.  Top with mandarian oranges.  Keep cake refrigerated.
