Turkey Meatloaf
Be sure to buy ground turkey breast for this recipe not just ground turkey.
1 lb. ground turkey breast
1 sm. onion, finely chopped
1/3 c. fine dry bread crumbs
1 egg, beaten
1 1/2 tsp. dried parsley
1/4 c. ketchup
1/8 tsp. ground pepper

Topping
1/4 c. apricot preserves
1 tbs. brown sugar
1 tbs. dijon mustard
Mix the first 7 ingredients together well. Form a firm 6in round loaf and place it in the middle of a 10 in round platter or pie plate. cover with the topping. microwave on high for approx. 14 minutes, rotating after 7 minutes. meatloaf will be done when a thermometer inserted in the center registers 145 to 155. Let stand for 5 minutes before slicing.
