Topping
1/4 c. apricot preserves
1 tbs. brown sugar
1 tbs. dijon mustard
Mix the first 7 ingredients together well. Form a firm 6in round loaf
and place it in the middle of a 10 in round platter or pie plate.
cover with the topping. microwave on high for approx. 14 minutes,
rotating after 7 minutes. meatloaf will be done when a thermometer
inserted in the center registers 145 to 155. Let stand for 5 minutes
before slicing.
