Grouper with Lemon and Capers

1-1/2 tsp. olive oil
2 6 ounce skinless grouper fillets
4 tbsp. chicken stock
1/4 lemon, cut into 6 mm (1/4 in.) slices and halved
1/2 tsp. capers, drained
1-1/2 tsp. unsalted butter
1/2 tsp. parsley, minced
Heat oil in a heavy non-stick skillet over medium high heat. Saut� grouper 3-4 minutes per side or until fish flakes easily. Transfer to a platter. Cover and keep warm. Stir stock, lemon and capers into skillet. Simmer 2 minutes. Remove from heat. Add butter and parsley and stir until butter is melted. Serve sauce over grouper.
