Salmon with Lemon Herb Mayonnaise
1/2 tsp. lemon rind, grated
2 tsp. unsalted butter, softened
1 tbsp. parsley, minced
2 tbsp. mayonnaise
340 g (12 oz) salmon steaks
Prepare grill. Combine all ingredients, except salmon, in a bowl. Season with salt to taste. Mix thoroughly and chill. Grill salmon 4-5 minutes per side, or until just cooked throughout. Serve salmon with a spoon of lemon mayonnaise.
