Protoss Strategy:

Perhaps the most well-known tactic the race has: Zealot rush. Make sure you get your Gateways quick, and have enough Pylons to support the Zealots, and a continuous production of probes, for if the rush fails you're going to need money. Dragoons are a good supporting unit for zealot rush, but make sure you get the vespene early. Finding the enemy quick is important as well, and if there are multiple opponents make sure you can defend your base in case of a counter.

For longer games, my units of choice are Dragoons and Zealots. Get plenty of Gateways, and alot of minerals/vespene. Defense of your money Nexus is a very important issue, but don't ever let down your guard, for there are always ways of getting through your defense. Once you have an attack force, don't sit around and let your opponent get stronger. Always assume he has the ability of producing more units then you are, and counter that with units that are better. It's always good to be able to see what your enemy is doing, so observers are an important thing, not to mention because of cloaked or burrowed units.

One of my favorite tactics of all time: Misdirection. Houdini could make elephants dissapear from a stage in front of a crowd of people, using misdirection. I've never been able to make elephants disapear, though it works quite well making buildings vanish. I have most success with this using Zerg, though Protoss does it well too. Mass units in the front of his base, and while hes paying attention to that, recall or drop Reavers/DT's on his production buildings/main money. Even if that attack fails, provided your recall/drop was a success, all you need to do is wait until he runs out of money, or press the attack and kill him.
