Mango Salsa

 

Ingredients:

2 cm piece of fresh ginger

2 large firm mangoes, peeled & cubed

1 red capsicum, diced

finely grated rind and juice of 2 limes

1/2 bunch coriander, leaves only

1/4 teaspoon cayenne pepper

 

Method:

Squeeze the juice from the ginger with a garlic press. Put mangoes, capsicum, chilli, rind, juices, coriander and pepper into a bowl. Stir until combined.

Serve with your favourite meat, chicken or fish dish.
