Vegetable Omelet
This can either be a breakfast or the main part of an evening meal.

1 C egg substitute or 4 eggs
2 T sour cream
2 T water
2 oz mushroom, sliced
1/4 C onion, diced
1/4 C green bell pepper, diced
1/4 C zucchini, sliced
1/2 C tomato, diced
2 oz swiss cheese
1 T oil

Saute vegetables in oil until soft, adding tomatoes last.  Whisk together egg substitute, cream and water until fluffy.
Pour into a heated pan sprayed with non stick spray
Lift the edges as it cooks to let the liquid run under. 
When it is nearly set, cover half with the cheese and veggies and fold the other half over.
Continue cooking until  eggs are completely set.

Makes 2 servings
