Hi! I'm Chevy.
I love baking, roasting, boiling, stewing, chopping, freezing, stirring, kneading, blending, grilling, frying, steaming, broiling, canning, etc!
I was diagnosed as a Type 2 diabetic about six years ago. It has been rough to reorganize my menu at times, but also fun.
As a result, I have collected some very interesting recipes.
Like all avid cooks, I am always on the lookout for more new and interesting stuff.
All recipes listed on this site are diabetic and have been tested.

STRAWBERRIES 'N CREAM
Yield: 24 appetizers 
12 large strawberries (about 12 ounces)
1 can pressurized whipped light cream
2 tablespoons shaved dark chocolate 
Rinse the berries and pat dry with paper towels.
Trim off the stem end and cut in half lengthwise.
Cut a thin strip off the bottom of each berry half so they will sit upright without tipping over.

Squirt about 2 teaspoons of the whipped cream into the center of each berry and sprinkle about 1/4 teaspoon of the shaved chocolate over the top. Serve immediately,or cover and chill for up to 1 hour before serving.
